This morning, I woke up craving a cold cereal recipe that was posted by Hummusapien! (See her recipe here.) I feel like I always go through phases with my breakfast choices. For a while, it was warm oatmeal with flax topped with banana and peanut butter, other days it’s avocado toast or a protein-packed fruit smoothie. I have a feeling this cold cereal will be sticking around for a while! I topped mine with banana, coconut flakes, cranberries, Trader Joes Super Seed & Ancient Grain Blend, peanut butter and almond milk!
Lunch today was a delicious mix of leftovers! Last night I was craving macaroni and cheese, so I put together a dish with Trader Joes brown rice and quinoa pasta and cashew “cheese” (nutritional yeast, some spices and almond milk). I also threw in some black beans for extra protein and sautéed kale, carrots and cabbage. Sautéed kale has been on repeat in my kitchen lately. I think it’s the perfect weeknight staple – quick, easy and delicious!
For a little afternoon pick-me-up, I had some cashews and cherries! (I obviously had a larger serving than what was pictured!) Cherries are one of my favorite summer snacks. I was excited when I saw them at my local TJ’s for only $3.99 this week. The price was perfect, but unfortunately the cherries were only okay. They weren’t as sweet and juicy as I was hoping. I think I might have to splurge the next time I see them at Whole Foods.
Dinner was a hodgepodge salad filled with spinach, red lentils cooked in coconut milk, sautéed mushrooms, sautéed brussel sprouts and turmeric rice. Does anyone else enjoy the types of salads where you throw leftovers and random veggies in a bowl and call it a meal? It’s probably one of my favorite things to do!
Now, I’m currently sipping on Celestial Seasonings Sugar Cookie Sleigh Ride (my favorite tea, ever!) with steamed almond milk, maple syrup and ashwagandha powder. I picked up this adaptogen at Moon Juice after work today so I’m excited to try it out over the next couple of weeks and see how my body reacts. If you’ve never heard of adaptogens, I’m planning on writing a post about it soon! I’ll be sure to update you all with my experience with ashwagandha, too!
