Hello, friends! I had a pretty exciting day today, so I’m excited to share what I did with you all!
I started off my morning with a 3 mile run for my marathon training. I was looking forward to trying out my new shoes! Yesterday, I bought a pair of Mizuno Waverunner 20’s (they’re bright blue and make me super happy) and so far, so good!
Post-run, I opted for a fruit smoothie made with frozen cherries, mango, cauliflower, blueberries, almond milk and a small handful of raw cashews. (It made enough to fill up two glasses – and yes, I finished both!)
As I was packing my food for the day, I decided to throw in some Ezekiel toast with Trader Joes peanut butter in case I felt hungry on the way into work. I’m glad I did because I felt a little hungry and ate one piece in the car!
Lunch today was a simple, yet delicious combo of sautéed kale with coconut oil and lots of chopped garlic, baked tofu marinated in liquid aminos and brown rice. Does anyone else gravitate towards basic meals? I’ve been making this exact sautéed kale on repeat for the past three weeks and I don’t think I’ll ever get sick of it! I just bought the pre-washed bag of chopped kale from Trader Joes and cooked it in coconut oil, garlic and a tablespoon or two of water for 5-10 minutes on the stove over low-medium heat until the kale was wilted!
Snacks today included mango balls (recipe from @lindsay.martin again!) in the afternoon and garlic hummus and rice crackers on my way to meet Alex at Fryman Canyon for an evening hike!
I still can’t get over how beautiful California is! Alex and I ventured out of a trail that took us around the canyon. The mountains in the distance were breathtaking as the sun was starting to set! We even had a true Californian hiking experience and spotted a celeb!
After the outdoor adventure, I decided to swing by sweetgreen. I have some credit towards a free meal or two, so why not?! I had tried the shroomami salad a few weeks ago at an event and loved it, so of course that was my pick tonight! It is one of their warm bowls and is made with organic wild rice, shredded kale, raw beets, bean sprouts, basil, spicy sunflower seeds, roasted sesame tofu, warm portobello mix and miso sesame ginger dressing.
Last but not least, I snacked on these yummy treats! If you haven’t tried Alter Ego Dark Quinoa chocolate, you must find it immediately! It reminds me of a Crunch bar – the quinoa adds the perfect texture. I still was craving something sweet so I ate this midnight chocolate cupcake that I picked up at Whole Foods too.
Did I eat two desserts? Yup. Do I have any regrets? No.
I’ve been learning to listen to my body, and this is what I was craving tonight. It may be due to the fact that it’s that time of the month but I felt satisfied! It’s all about balance!
