Hi everyone! I hope you all are having a great week!
This morning I started out with a 3 mile run towards marathon training! For those of you who don’t know, I’ll be running the Marine Corps Marathon (this will be my second time!) in October. If any of you are training for an upcoming race, check out Hal Higdon’s website for training plans galore!
…and now, onto the meals!
Breakfast was a big green smoothie! I used almond milk, frozen cauliflower, mango and pineapple along with spinach, banana, 1/2 scoop Vega protein powder, coconut flakes, a splash of water and a couple of ice cubes. I’ve been addicted to green smoothies this week. My body has been craving these every morning and I’m not complaining!
Lunch was leftovers from a mini meal prep that I did Sunday afternoon. Black beans, quinoa (can you tell I enjoy simple meals?), roasted kale with tons of garlic and roasted petite carrots seasoned with thyme. These tupperware containers from Green Quality Goods are pretty life-changing. I’ve been trying to use more glassware but these are BPA, toxic-free, reusable and cheap!
Snacks this afternoon included a juicy orange from my local farmers market, spirulina balls (try one of Lyndsay‘s recipes, you’ll thank me later) and one of my favorite sparking waters from Spindrift! Side note: since moving to California, I’m left in awe every time I stroll by the markets. This New England girl loves the opportunity to buy fresh fruit and berries all year round!
Dinner was a giant taco salad bowl (Taco Tuesday: take II). Thinly chopped romaine topped with brown rice, tomatoes, pico de gallo, refried beans, salsa verde, black olives, avocado and nooch! Does anyone else top their taco salads with everything but the kitchen sink and then douse it in salsa? If I had more ingredients in my kitchen, I totally would have added sautéed peppers and onions as well!
Finally, I was still a little hungry and craving something sweet so I decided to honor my body’s cravings with this chocolate chip cookie from Lenny & Larry’s. It definitely hit the spot!
